- 170 Grams Butter Softened
- 170 Grams Caster Sugar
- 170 Grams Self-Raising Flour
- 3 Eggs
- 1 Tsp Vanilla Extract
- 12 Cake Cases
- 100 Grams Butter Softened
- 190 Grams Icing Sugar
Preheat the oven to 200° and put the 12 cupcake cases into the muffin tin
Beat the butter and sugar in a large bowl until smooth
Add the eggs one at a time and add the vanilla extract
Beat until the mixture is pale and creamy
Fold in the flour
Spoon into the cupcake cases
Pop in the oven for 15-20 minutes
Leave them to cool before adding the topping
Beat the butter and icing sugar until smooth
Add the topping and decorate!
